Alcoholic cupcakes are taking the baking world by storm. But why? Lots of people like alcohol; lots of people like cake. More than that, however, the guinness in this recipe contributes to a brilliantly moist cupcake, in perfect harmony with the lovely chocolatey-ness and cool cream cheese frosting. Intensifying the flavour and texture of the sponge, you don't even have to like Guinness to LOVE these cupcakes. (Plus, Guinness is said to have health benefits similar to those of fruit and vegetables - just incase you need another excuse to indulge!)
Chocolate Guinness Cupcakes
250ml Guiness
250g slightly salted butter
80g cocoa
400g caster sugar
142ml pot of sour cream
2 eggs
1 tablespoon vanilla extract
270g plain flour
2 1/2 teaspoons bicarbonate of soda
Cream Cheese Frosting:
300g cream cheese
150g icing sugar
150ml double cream
Preheat oven to 180°C and line two 12 hole muffin tins
Pour the Guiness into a large saucepan. Add butter in small pieces and heat until it all melts together.
Remove from heat and whisk in cocoa and sugar.
Beat sour cream, eggs and vanilla extract. Mix into the pan.
Gradually whisk in flour and bicarbonate of soda.
Divide mixture between muffin tins using a jug (this is best as the mixture is very runny).
Bake for 18-20mins or until they are well risen.
Cool muffins on a wire rack before icing.
Cream cheese frosting:
Whisk all the frosting ingredients together with an electronic whisk until thick and creamy. Spread or pipe over the cupcakes.
