When you run out of butter, you feel pretty limited in what you can bake. Therefore I decided to try a brownie recipe that used mayonnaise and was in turn, low fat. I don't know what I was expecting, but it is now my absolute favourite simple brownie recipe. It tastes far too good to be low fat, yet it is! By the way, you can't taste the mayonnaise, it's just chocolate all the way!

Chocolate Chip Salted Caramel Cookie Bars
From Two Peas & Their Pod, this recipe is a recent favourite of mine. The cookie dough is delicious (no doubt I'll be making it in the future to eat straight from the bowl) but with the salted caramel, words can't describe the yummyness! Can you see the caramel oozing out of the middle? AARRGHHH! If you can wait until these bars are cool before inhaling them, you have serious skills in the art of self-control.

Homemade Snickers Bars
I've been eating these all morning. Just a heads-up. Anyways...
I do like a Snickers bar. Especially when they're in brownies or, even better, in brownies with caramel. But with the opportunity to make actual Snickers at home, it was a no-brainer that I'd be making these after seeing the recipe on Brown Eyed Baker. The flavours and textures will leave you coming back for seconds, thirds, fourteenths! Great for gifts, parties, guests...or eating for breakfast despite a lifelong grudge of eating sweet things before lunchtime - they're that good.
The chocolate layers are made up of milk chocolate mixed with peanut butter. I hate peanut butter on it's own, but with the chocolate it's extremely addictive. The nougat bit is chewy and divinely squidgy. I reduced the amount of peanuts by half a cup - it worked fine but if you want a bit more crunch in your nougat, add the full amount. Then the caramel...it speaks for itself, don't you think?! The final element to this masterpiece is more milk chocolate melted with peanut butter. The result is a delicious, addictive chocolate bar with the added satisfaction of making it yourself.

Malted Chocolate Chip Cookie Bars
Let's use me eating most of this before it was even cooled as proof of just how good it is. It's got everything in it; marshmallows, chocolate, maltesers and Ovalitine all contribute to a lusciously gooey, chewy texture and the awesome taste of malt, cookies and chocolate rolled into one. Chocolate Snickers Brownies
There's no such thing as "too many brownie recipes", which is why I never stop looking for them. Browsing Two Peas & Their Pod I came across a recipe for Peanut Butter Snickers Brownies. But since the peanut butter was meant to be swirled into the prepared brownies without being mixed with anything first, I decided to leave it out as I don't like it by itself. I can tell you, they are delicious without it, but if you really want the peanut butter, swirl a third of a cup of the creamy kind over the brownies before you bake them. Snickers aren't my favourite chocolate bar, but paired with these brownies I love them; the chocolaty, fudgy indulgence of the brownie with chewy, crunchy bites of Snickers is heavenly.

Chewy Caramel Brownie Pie
Another recipe from The Pastry Chef's Baking, this is a delicious brownie with a caramel topping and a sprinkling of nuts and chocolate. The intensely chocolaty, fudgy brownie goes perfectly with the chewiness of the sweet caramel - and it's all baked in a round dish. Doesn't it sound better to say "I ate half the pie" than "I ate all the brownies"? No? Oh well.

Rocky Road Brownie Bars
Imagine a fudgy brownie that, in any case, would be deliciously chocolaty and fudgy all by itself. Then sprinkle over some milk chocolate, nuts and mini-marshmallows. Dulce de Leche Snickers Brownies
This recipe is from The Pastry Chef's Baking and let me tell you now, you should be putting your apron this very minute - the sooner you start the sooner you will be able to eat the entire tray of enjoy these amazing brownies. The brownie batter is dark, rich and gooey, and it's common knowledge I can't resist a gooey brownie. If that's not mouthwatering enough, sweet caramel runs all the way through the middle, which balances perfectly with the dark chocolate. But wait - there's more! Chopped snickers bars are sprinkled over the top. This combination means you are looking at a top 5 candidate in my list of favourite ever brownie recipes.

Chocolate Chip Cookie & Oreo Brownies
If I had to choose my favourite brownie recipe, out of my entire collection - and there are hundreds - then this would be it. A chocolate chip cookie base is topped with whole oreos and luscious brownie. The oreos soften in the oven, creating one-third of the deliciousness, along with the rich, fudgy chocolate brownie and the crunchy, chocolate-laden cookie base. The ultimate brownie variation; a work of genius. Yum. I can't even express how much I love these brownies.

Raspberry White Chocolate Chip Brownies
Raspberry and white chocolate are a match-made in heaven. So, imagine my delight when these flavours are combined with that of an intensely chocolaty brownie. The Fat Witch Bakery in New York is renowned for it's brownies, of which it has a range of flavours to suit anyone's taste. From brownies, to blondies, to bars, and countless variations of each, there's something to suit every brownie craving you'll ever have! In the future I hope to travel to New York, visit the Fat Witch Bakery and try every flavour they have. I shall call it "research". But for now, I'll just keep making the delicious recipes from their awesome book: Fat Witch Brownies. Their recipe for Blondies is to die for, but that's another post altogether...Anyway, this is a recipe from the 'Delicious Decadence' chapter of the book. Well titled chapter, I'd say.

Caramel Swirled Brownies
Tinned caramel is one of those luxuries in life that you wish with all your heart could be discovered as 'healthy' so that when you eat loads of it with a teaspoon, you'll feel no guilt whatsoever. But let's face it: there's gonna be some guilt involved. So why not make the most of it and swirl that tin of heaven into a dreamy combination of chocolate brownie and Dulce de Leche? Cookie Dough Brownies

Chocolate Fudge Cake
Yum. Simple ingredients, simple recipe, simply delicious. The best dessert recipe ever - imagine the most gooey, chocolatey brownie from your wildest dreams, multiply it by ten, then call it a cake for an excuse to have it with cream. Chocolate Banana Brownies
A good brownie, in my opinion, should be fudgy and gooey. A brownie lacking this criteria should not be called so, which is why I can most definitely confirm that these are Brownies, the banana-chocolate combination making them stand out from the delicious crowd. This recipe comes from Cookie Madness, one of my favourite baking blogs. Although I changed the recipe a fair bit to suit the ingredients on hand, this has become one of my favourite brownie recipes and I highly recommend that you try it, whether you use my adapted recipe or the original.

Fudgy Peanut Butter Chocolate Chip Brownies
Without having a one-person debate over whether these are brownies or blondies, I'm going to get straight to the point: YUM. The texture is perfectly fudgy and chewy, while the taste is a delicious balance of nutty chocolatey-ness. Personally, I find peanut butter disgusting - but miraculously, it gives these brownies an amazing flavour; one which you must try. But be careful, they are seriously addictive...

White Chocolate Blondies
For someone who makes a LOT of brownies, this is one thing I had never tried before. Intrigued by the idea of a 'white' brownie, I thought I'd give it a go. There are many variations on the Blondie - some plain (brown sugar being the dominant flavour), and some with nuts or peanut butter. This recipe uses white chocolate, which provides a moist, fudgy texture as well as a great flavour. Don't worry about your loyalty to the traditional brownie; they would want you to experience this deliciousness.
