S'mores Chocolate Chip Cookies

Two Peas & Their Pod come up with the best cookie recipes ever. The proof? These delicious chocolate chip cookies that taste like s'mores - graham cracker (digestive biscuit) crumbs, mini marshmallows and chocolate chips are all mixed into the dough, making a lusciously flavoured and textured cookie.

Malted Chocolate Cookies

I've tried this recipe before, using Ovaltine, and they were good, just not enough malt flavour. However I recently tried the same recipe again but used malted milk powder, and they were sooo malty and chocolaty! They are up there with the likes of Triple Chocolate Oreo Chunk Cookies, and that's saying something.

Cookie Dough Truffles

After receiving my copy of The Cookie Dough Lover's Cookbook, and trying five of the recipes within a three-day period, I can highly, highly recommend this book. It was the 50th addition to my shelf of baking books and this is the one I was most excited about. It's awesome. The cookie dough is insanely good - the best ever - and here it is dipped in chocolate. Now go buy the book, you won't regret it!

Bourbons

My sister and I used to eat bourbon biscuits all the time; I will forever associate them with the film 'Harry Potter and the Chamber of Secrets' because that's when we would eat insane amounts of them. I recently bought Kate Shirazi's book 'Cookie Magic', which is filled with recipes for all the classics: custard creams, digestives, rich teas...and bourbons. They were so much more chocolaty than the ones I remember from my Harry-Potter-watching-days. Magic!

Chocolate Mayonnaise Brownies

When you run out of butter, you feel pretty limited in what you can bake. Therefore I decided to try a brownie recipe that used mayonnaise and was in turn, low fat. I don't know what I was expecting, but it is now my absolute favourite simple brownie recipe. It tastes far too good to be low fat, yet it is! By the way, you can't taste the mayonnaise, it's just chocolate all the way!

Rose Cupcakes

Until the awesome Hummingbird Bakery book, Cake Days, I had never contemplated the idea of making a cupcake with the fragrant hint of...flowers. But knowing how reliable the recipes from this book are, it would have been silly not to try such an intriguing recipe. Very silly indeed, because they were delicious! Be warned: the frosting is the kind you want to make just to eat with a spoon.

Chocolate Mudslide Cookies

Remember when I made Oatmeal Caramel Crumble Bars to get over failing the English prelim? Well, the exam was today. Let's just say I'll need at least three batches to recover. In the meantime let me tell you about  this insane chocolate cookie recipe from Cookie Madness. Chocoholics, I guarantee you will LOVE these cookies. Plus, the texture is so fudgy and mmmmm-y! As you can tell my brain is far too overworked to think of any decent adjectives. Anyway, I would even go as far as to say that the Triple Chocolate Oreo Chunk Cookies have some competition! 


BTW: The recipe uses cake flour - make your own here but if you only want to make enough for this recipe, measure out the 1/4 cup flour and replace slightly less than 3/4 tbsp with cornflour.

Cola Cupcakes

I'd been wanting to make these cupcakes from The Hummingbird Bakery for a while; the only thing I needed was Cola syrup. I looked far and wide at many supermarkets, and didn't want to pay postage rates for buying it online. I had accepted I would never experience a Cola cupcake. But then - in the pet shop, of all places - I had finally found not only Cola syrup, but a whole variety of syrups from Cream Soda to Lemonade! To sum up how good these cupcakes are, I'll leave you with one final thought: a family member, who shall remain unnamed, ate three in one day.

Chocolate Chip Salted Caramel Cookie Bars

From Two Peas & Their Pod, this recipe is a recent favourite of mine. The cookie dough is delicious (no doubt I'll be making it in the future to eat straight from the bowl) but with the salted caramel, words can't describe the yummyness! Can you see the caramel oozing out of the middle? AARRGHHH! If you can wait until these bars are cool before inhaling them, you have serious skills in the art of self-control.

Cookie Dough Peanut Butter Cups

Only having one mini-muffin pan has recently caused me a great deal of pain: I had to make HALF a batch of these delicious peanut-butter infused cookie dough cups. They were gone before I could take a better picture.  If I haven't made this clear already, I love cookie dough!! These were awesome, and I don't even like peanut butter! But beware - don't make a half batch if you can help it, make the full amount because they will be gone in a flash.

Chocolate Guinness Cake

Back in September 2011 when I started this blog, one of the first recipes I posted was for Chocolate Guinness Cupcakes. This recipe is quite similar, but made in cake form rather than cupcakes. Both are delicious and have only slight changes, but I can verify they are both delicious. The cream cheese frosting is to-die-for and is so easy to make, as is the other recipe (which uses double cream). Whatever recipe you go for, you must make one of them. So moist and chocolaty, enhanced by Guinness. YUM!

Homemade Snickers Bars

I've been eating these all morning. Just a heads-up. Anyways...
I do like a Snickers bar. Especially when they're in brownies or, even better, in brownies with caramel. But with the opportunity to make actual Snickers at home, it was a no-brainer that I'd be making these after seeing the recipe on Brown Eyed Baker. The flavours and textures will leave you coming back for seconds, thirds, fourteenths! Great for gifts, parties, guests...or eating for breakfast despite a lifelong grudge of eating sweet things before lunchtime - they're that good. 
 The chocolate layers are made up of milk chocolate mixed with peanut butter. I hate peanut butter on it's own, but with the chocolate it's extremely addictive. The nougat bit is chewy and divinely squidgy. I reduced the amount of peanuts by half a cup - it worked fine but if you want a bit more crunch in your nougat, add the full amount. Then the caramel...it speaks for itself, don't you think?! The final element to this masterpiece is more milk chocolate melted with peanut butter. The result is a delicious, addictive chocolate bar with the added satisfaction of making it yourself.

Mint Hot Chocolate Cupcakes

Studying for your exams can be stressful. Today was my first exam and *touchwood* I think I made it. Yesterday, after a long and dreary day of studying, I made these cupcakes. From the awesome book Making Cupcakes with Lola, they consist of chocolate cake filled with a refreshing minty filling and topped with a light and fluffy peppermint frosting. Whether you're doing exams or not, you deserve to eat these cupcakes.

Malted Chocolate Chip Cookie Bars

Let's use me eating most of this before it was even cooled as proof of just how good it is. It's got everything in it; marshmallows, chocolate, maltesers and Ovalitine all contribute to a lusciously gooey, chewy texture and the awesome taste of malt, cookies and chocolate rolled into one. Chocolate Snickers Brownies

There's no such thing as "too many brownie recipes", which is why I never stop looking for them. Browsing Two Peas & Their Pod I came across a recipe for Peanut Butter Snickers Brownies. But since the peanut butter was meant to be swirled into the prepared brownies without being mixed with anything first, I decided to leave it out as I don't like it by itself. I can tell you, they are delicious without it, but if you really want the peanut butter, swirl a third of a cup of the creamy kind over the brownies before you bake them. Snickers aren't my favourite chocolate bar, but paired with these brownies I love them; the chocolaty, fudgy indulgence of the brownie with chewy, crunchy bites of Snickers is heavenly.

Chocolate Fondants with Salted Caramel

The other night I made something so gooey and decadent I could have cried. The chocolatyness? Insane. The salted caramel? *drools speechlessly* The combination of the two is so rich and indulgent - just imagine digging in to the picture above, taking out a gooey spoonful of warm deliciousness and eating your way to dessert heaven. Rocky Road Cookies

A friend of mine recently gave me a recipe for these cookies and I tried them immediately. I LOVED them. The cookie was sooo chocolaty and the marshmallows on top surpassed any gooeyness I've ever experienced before. A combination to die for. Let's just say I'll be making these on a regular basis from now on.

Sticky Toffee Pudding

Whenever I eat out, nine times out of 10 I'll get the Sticky Toffee Pudding. And if I don't, it's only because of a legally-binding contract with someone else at the table stating that I'll get a bite of theirs. I love the sweet, sticky satisfaction that oozes from each mouthful, which is why I like to make it at home sometimes a lot. This recipe is from an M&S book but I used a different sauce recipe - I'll post both and you can decide which one you want to try, but both are yummy.

Sweet & Salty Chocolate Cake

I don't like salt. I don't like adding a large amount in baking, and I don't like sprinkling it over food. Yet this recipe, from the Hummingbird Bakery: Cake Days book, looked interesting as I had heard about the wonders of salted caramel. I was curious as to how salt would work in caramel, let alone this cake, so I made it. It took hours - I started at around 5:30pm on Wednesday, first making the salted caramel, then the silky chocolate caramel frosting. Then it was time to bake three layers of intensely chocolaty cake, one layer at a time as I only had one tin. After a thorough cleaning of the kitchen, it was almost midnight, so I thought I would wait until the morning to assemble the cake. The frosting had hardened in the fridge overnight - waiting on it to soften was agonizing as I couldn't wait to put all the yummy elements together (as it turns out, I love salted caramel). Assembling the cake was exciting. Each layer of chocolate cake was spread first with the salted caramel, then the frosting. The result? A moist chocolaty cake with a twist: caramel that oozes from each layer with salt that only serves to complement a unique, decadent flavour. After one bite, my sister declared it the best thing I have ever made. And I've made a lot of stuff.

Chewy Caramel Brownie Pie

Another recipe from The Pastry Chef's Baking, this is a delicious brownie with a caramel topping and a sprinkling of nuts and chocolate. The intensely chocolaty, fudgy brownie goes perfectly with the chewiness of the sweet caramel - and it's all baked in a round dish. Doesn't it sound better to say "I ate half the pie" than "I ate all the brownies"? No? Oh well.

Sticky Toffee Cupcakes

Sticky toffee pudding is one of my favourite desserts; the moist, sticky sweetness is just irresistible. After the success of Cookie Dough Cupcakes from Making Cupcakes With Lola, I decided to try another of their recipes. The cake part is essentially sticky toffee pudding - delicious. The topping is not the traditional butterscotch sauce but a luscious mixture of home made rum-infused toffee with white chocolate ganache. It certainly puts the 'sticky' in sticky toffee! If you don't already own the book, this is just one reason to buy it, as it's filled with loads more delicious recipes like this one. If you like sticky toffee pudding, you'll love these cupcakes.

Creme Egg Fudge


Don't you love Creme Eggs?! The indulgent milk chocolate shell encasing gooey sweet deliciousness that's just MEANT to be licked...yuuum. If someone had told me just a week ago that is was possible to recreate exactly this decadent deliciousness at home, then I'd say they were crazy. CRAZY! But then I saw this recipe from Shugary Sweets. I'd say it's an exact recreation a miracle. If you want to make them in the traditional egg shape then feel free, but either way, prepare yourself for some serious indulgence.

Dulce de Leche Snickers Brownies

This recipe is from The Pastry Chef's Baking and let me tell you now, you should be putting your apron this very minute - the sooner you start the sooner you will be able to eat the entire tray of enjoy these amazing brownies. The brownie batter is dark, rich and gooey, and it's common knowledge I can't resist a gooey brownie. If that's not mouthwatering enough, sweet caramel runs all the way through the middle, which balances perfectly with the dark chocolate. But wait - there's more! Chopped snickers bars are sprinkled over the top. This combination means you are looking at a top 5 candidate in my list of favourite ever brownie recipes.

Rolo Chocolate Chip Cookies

 When browsing the awesome My Baking Addiction I came across a recipe that I could not ignore: Rolo Stuffed Chocolate Chip Cookies. I know it's the third stuffed cookie recipe this month, and the second involving Rolos, but seriously, Rolos and Chocolate Chip Cookies? Can you blame me? The cookie dough is divine; you'll want to eat it straight from the bowl - not that I know from experience or anything... Even if you don't have rolos, they would be awesome on their on their own - but the rolos provide a chewy chocolaty caramel-y centre. That's right. Now go forth and make these cookies!

S'mores Stuffed Chocolate Chip Cookies

 Ever since making the Oreo Stuffed Chocolate Chip Cookies last week, I've been obsessed with stuffed cookies, being amazed at the endless possibilities of what you can put in a cookie. Browsing one of my favourite baking blogs, Brown Eyed Baker, I came across this recipe in which you stuff the cookies with s'mores! Marshmallows and chocolate are sandwiched between two bits of digestive biscuit and baked in a delicious cookie dough. The result? A cookie filled with the amazing gooeyness of melted marshmallows and chocolate that oozes from every bite.

Double Chocolate Cookies

Have you ever had a cookie with the texture of a fudgy brownie inside, but with the slightly crispy edges of a classic cookie? And did this cookie happen to include milk chocolate chips to provide pockets of extra chocolaty awesomeness? If not, then today is your lucky day. But either way, I highly recommend these cookies for not just their taste, but texture too. Taken from the book "C'est fort un chocolat", which I bought in Paris, it has become a valued and regularly used recipe in my ever-expanding collection. 
And they're great with milk.

Rolo Fudge

 I love rolos. And it goes without saying that I love fudge, which is why I thought I'd try this Rolo Turtle Fudge recipe from Shugary Sweets. It turned out to be a smooth, chocolaty fudge with the perfect texture and the occasional bite of chewy caramel from the rolos. I made a few changes to the recipe, like omitting the walnuts, and I ran out of milk chocolate so had to use a combination of milk and dark. Next time I'll be more prepared and use all milk, as although the fudge was rich and delicious, I can't help but wonder how much more so it would have been without the dark chocolate. Living in the UK, where marshmallow fluff isn't available, I bought it from Amazon
