Fudgy Peanut Butter Chocolate Chip Brownies


Without having a one-person debate over whether these are brownies or blondies, I'm going to get straight to the point: YUM. The texture is perfectly fudgy and chewy, while the taste is a delicious balance of nutty chocolatey-ness. Personally, I find peanut butter disgusting - but miraculously, it gives these brownies an amazing flavour; one which you must try. But be careful, they are seriously addictive...


Fudgy Peanut Butter Chocolate Chip Brownies
(adapted from this recipe)

1/2 cup peanut butter
1/3 cup butter, softened
2/3 cup caster sugar
1/2 cup brown sugar, packed
2 eggs
1/2 teaspoon vanilla
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup chocolate chips OR chopped chocolate

Preheat your oven to 180ÂșC and grease a 9" brownie pan (I used an 8" tin which worked fine). Cream together the peanut butter and butter. Beat in both the sugars, eggs and vanilla. Stir in flour, baking powder and salt until evenly blended. Fold in the chocolate chips.
Spread into the brownie pan and bake for around half an hour or until toothpick inserted in centre comes out with fudgy crumbs. Cool completely before cutting into squares.
